The Myth of the Balanced Diet
Dr. Wallach:
Even if you are eating healthy, balanced foods, and taking vitamins
daily, your body is still almost certainly lacking vital nutrients,
starving for missing nutrition.
YOU SAY YOU DON'T BELIEVE IT?
Dr. Wallach:
Recent research indicates that most people in the US have at least
one hidden deficiency of a major mineral such as calcium or
magnesium. Deficiencies in your intake of food, water, and even
oxygen can be hard to spot. But over time, they can lead to
degenerative diseases, and then death.
MINERALS BEFORE VITAMINS?
Dr. Wallach:
YES! Lacking vitamins, the body can use minerals. But without
minerals,
vitamins are worthless. You may think you're getting your
minerals in a "balanced diet" . But chances are, if you're not
supplementing your diet with absorbable minerals, you're one of the
95% of Americans lacking in at least one major mineral, and a host
of trace minerals. Back in 1936 - 60 years ago - US Senate Document
264 lamented the lack of mineral nutrition in our food. It's 60
years worse now. HOW DID WE GET INTO THIS PREDICAMENT?
HOW OUR ANCESTORS DIED
Dr. Wallach:
In the early 1800's Americans began to cross the Great Plains. What
you don't know is that they never just settled in one place. Every
3-5 years, they had to pick up and move. They would start a little
farm in Kansas or Nebraska, with a milk cow, a couple of pigs, some
sheep and a few kids. After three to five years, one of the kids
would die. Dad would get consumption. The cow would dry up . The
tomato plants would not grow more than a foot, and would not make
tomatoes. So they were about to starve; and if they made it through
the winter, they would throw all their belongings in a wagon, and
move a hundred miles west. There they would set up again. In three
to five more years, another child would die, and Ma would get
consumption in winter. Tomato plants would not grow higher than a
foot, and would not make tomatoes. The cow would dry up. If they
survived the winter, they'd throw everything in the wagon, and they
would move west again.
EVIL SPIRITS IN OUR TOMATOES?
Dr. Wallach:
No worse! The soil was being depleted. Crops took minerals out of
the soil; nothing put them back in. The only way to beat the cycle
was to own a piece of bottom land . Wealthy farmers owned the bottom
land. When it flooded, they would get new topsoil, silt and
nutrition from hundred of miles upstream. If you were lucky enough
to have a piece of bottom land, you did not have to move. The
fertilizer would come to you. The Egyptians realized this 5000 years
ago and worshiper the Nile river for its yearly life giving floods.
But if you were out on the prairie with no river, every 3 - 5 years you would have to move. Otherwise, your whole family would starve to death, for there would be nothing left in the soil.
So by this process.....repeated tens of thousands of times over the last 200 years.....the settlers were actually strip-mining the nutrients from the soils. And if there are no nutrients in the soil, there is no way your tomatoes or carrots or apples or potatoes can have nutrients in them.
DON'T BE FOOLED BY TECHNOLOGY
Dr. Wallach:
Commercial fertilizer came on the market about 1900. Did this solve the problem? Hardly, it created more.
Next time you go to your garden center, look closely at the ingredients in the fertilizer. Nitrogen, Phosphorus & Potassium (NPK) . That's it.....no more.
WHY? No matter what kind of plant- whether potatoes, okra, corn, wheat, eggplant, carrots or broccoli, NPK fertilizer is all that is needed to get the maximum yield per acre. That's the minimal nutrition plants need..
So that's all the farmer gives them. But don't blame him....if he put a lot of other minerals in the soil , his wheat would cost an extra 25 cents per bushel...and nobody would buy it. He'd be out of business.
Let's see...it takes 3 - 5 years to
exhaust the soil. We started fertilizing about 1900, so we've been
putting NPK into the soil for 96 years-which means that for 90+
years, the soil has been exhausted except for what the plants
minimally need.
WHAT TOMATOES CAN'T DO FOR YOU
Dr. Wallach:
The fact is that animals and human beings require about 90 nutrients - between 45 & 60 minerals, 3 essential fatty acids. And for 90 + years, only three have been put back into the soil.
We know that plants can make amino acids. They can make most vitamins, and they can make varying amounts of essential fatty acids.
WHAT THE VITAMIN CROWD NEVER TELLS YOU ABOUT THEIR SUPPLEMENTS
Dr. Wallach:
When you are taking a vitamin-mineral tablet, you are taking what is called "METALLIC MINERALS" You only absorb 8-12% of these metallic minerals, the rest passes through you. If you talk to Urologists, who x-rays patients, they will tell you what they sometimes see lined up in the small intestines: WHOLE VITAMIN & MINERAL TABLETS, like little boxcars, taking a long ride through the intestines.
Before you can use even the normal 8-12% of a metallic mineral, the WHOLE mineral must be broken down by your body. That's asking a lot of a body unless it's already in top shape.
The health food industry had a problem in the late 70's, they developed "Chelated" minerals: wrapping amino acids or protein around the minerals helps the body metabolize them. This results in slightly over 50% absorption at best.
Keep in mind....metallic minerals (also known as elemental minerals or salts) come from oyster shell, calcium carbonate, limestone, clay, sea salts. Supposedly, too much of some of these elements can have toxic effects on your body. Human beings are not able to efficiently absorb them or to use them. Certain animals are, but we are not. Nevertheless, that's where the minerals in most mineral tablets come from.
